Salmon Patties
My husband likes this more than the salmon in the first place!
ingredients
- 3 salmon fillets, flaked
- 1 cup Torn bread slices
- 1/2 cup Minced onions
- 1 Green onion, chopped finely
- 1/3 cup minced green/red peppers
- 1/4 cup Milk
- 2 Eggs
- 2 TBL Minced parsley
- 1 TBL Minced garlic
- 1 TBL Lemon juice
- 2 dashes salt
- 2 dashes Tabasco
- 1/4 tsp. dried dill
- 1/2 tsp. Pepper
- 2 TBL Olive oil
- 1 cup Panko or Dry Breadcrumbs

Combine all ingredients except Panko/Dry Breadcrumbs and Olive Oil. Shape into patties 3/4 thick on wax paper. Sprinkle with crumbs, turn and sprinkle again, pressing slightly.

Heat Olive Oil in heavy skillet and brown on both sides over medium heat, turning gently after about 5-6 minutes. Serve immediately with lemon slices.

Make patties into desired size...small for appetizers, large for main course.
