Easy Chicken Enchiladas

ingredients

  • 8-10 large flour tortillas
  • 2 16 oz refried beans (Rosarita-vegetarian)
  • Shredded Mexican Cheese
  • 2 16 oz enchilada sauce (Hatch-medium)
  • 4 breasts of organic chicken

directions

    Rinse and boil chicken approximately 20 minutes

  • 2

    Shred chicken with fork/knife

  • 3

    Generously spread beans on tortilla, then add shredded chicken & cheese. Roll and place in pan. Repeat until pan is full or tortillas are gone.

    Pour enchilada sauce over enchildadas to the rim of the pan.

  • 5

    Bake for 20-25 minutes at 350 degrees
