Easy Chicken Enchiladas
ingredients
- 8-10 large flour tortillas
- 2 16 oz refried beans (Rosarita-vegetarian)
- Shredded Mexican Cheese
- 2 16 oz enchilada sauce (Hatch-medium)
- 4 breasts of organic chicken

Rinse and boil chicken approximately 20 minutes

Shred chicken with fork/knife
- 3
Generously spread beans on tortilla, then add shredded chicken & cheese. Roll and place in pan. Repeat until pan is full or tortillas are gone.

Pour enchilada sauce over enchildadas to the rim of the pan.

Bake for 20-25 minutes at 350 degrees
