Chicken Paprikash
ingredients
- 2 T olive oil
- 3-3 1/2 lbs cut up chicken
- 2 medium onions, chopped (1 cup)
- 1 clove garlic, finely chopped
- 1/2 cup chicken broth
- 2 T paprika
- 1 tsp salt
- 1/4 tsp pepper
- 1 medium tomatoe, chopped (3/4 cup)
- 1 green bell pepper, cut into 1/2" strips
- 1 cup non-fat sour cream

1. Heat oil in skillet over medium heat. Cook chicken - about 15 mintues or until brown on all sides. Remove from skillet.

2. Cook onions and garlic in skillet over med. heat -a bout 3 mintues. Drain oil from skillet.

3. Stir in broth, paprika, salt, pepper & tomatoe into onion mixture. Return chicken to skillet. Heat to boiling - reduce heat to low. Cover & Simmer 20 mintues.

4. Stir in bell pepper. Cover & simmer 10 - 15 minutes longer or until chicken is no longer pink. Remove chicken from skillet - keep warm.

5. Skim fat from liquid in skillet. Stir sour cream into liquid in skillet. Heat until hot. Serve w/ chicken.
