ingredients

  • 3 cups of granulated sugar
  • 1/2 cup light corn syrup
  • 1 can evaporated milk, plus enough milk to make 1 total cup
  • 3 squares of chocolate
  • 2-4 tbl butter
  • 1 tsp vanilla
  • Nuts (Optional)

    Combine the above ingredients in a heavy saucepan and place over medium-high heat stirring constantly until the sugar is dissolved.

    Add 3 squares of chocolate and let boil without stirring except to carefully scrape the bottom of the pan occasionally, until it reaches 238°, or slightly less.

    At the beginning stages of cooking there will be sugar crystals form on the saucepan above the mixture. Wash these down with a brush dipped in water.

    Remove from the heat and add butter and vanilla.

    Let cool to at least 120°.

  • 6

    Beat approximately 10 minutes with an electric mixer.

    Add nuts if desired
