This was Christmas. Arriving late on Christmas Eve in Abilene...Looking in the living room to see if Santa had come yet and seeing large silver platters filled with perfectly white clouds of candy.

ingredients

  • 2cups sugar
  • 3/4-cup water
  • pinch of salt
  • 3/4-cup white syrup
  • 3 egg whites
  • 1-cup nuts
  • (1 teaspoon Vanilla)

directions

  • 1

    Mix sugar, syrup and water and dissolve well before

    placing on the stove to cook; cook until a soft ball

  • 3

    is formed in cold water, (230 degrees). Beat egg whites until stiff,

    add salt (about 1/8 tsp.); pour half of the boiled

  • 5

    mixture over the beaten egg whites (before pouring

  • 6

    syrup over the egg whites let it stop boiling) beating

  • 7

    constantly. Place remaining half on the stove and cook

  • 8

    until if forms a brittle mixture in water (250 degrees). add to

    first mixture and beat until creamy. Add nuts and

  • 10

    pour into buttered plate. When cool slice in desired

  • 11

    squares. (Emma dropped hers by spoonful)

    book. The Parker Cook Book She said Daddy gave her
