Helen's Red Velvet Cake

ingredients

  • 1/2 C. Crisco
  • 1 1/2 C. sugar
  • 2 eggs
  • 1 tsp. salt
  • 1 tsp. Vanilla
  • 2 1/2 C. flour
  • 1 1/2 tsp. soda
  • 1 1/2 tbs. cocoa
  • 1 C. buttermilk
  • 2 oz. red food coloring
  • Icing #1
  • 1 box powdered sugar
  • 1/2 cup butter
  • 1 8oz cream cheese
  • 1/4 tsp salt
  • 1 tsp vanilla
  • Icing #2
  • 1 cup fine chopped pecans
  • 2 tbs flour
  • 1 cup milk
  • 1 cup of powdered sugar
  • 1 tsp Vanilla
  • 1 cup Butter
  • cook flour and milk till thick, stirring constantly, then cool.
  • Cream butter and powdered sugar till fluffy, then add Vanilla, add with milk mixture. Mix by hand. Sprinkle cake with pecans.

Cream Crisco and sugar, add eggs, beat well. Make a paste of the cocoa and food coloring...add to sugar mixture....mix....salt, vanilla with buttermilk and add alternately with flour to sugar mixture. Mix soda and vinegar and fold in the batter. Bake at 350 degrees - 30 minutes. 9" pan.
