Rum Cake

My mother-in-law, Dorothy, made this cake for us often and it is DELICIOUS!

ingredients

Cake
  • 3/4 Cups chopped pecans
  • 1 18.5oz pkg butter golden cake mix (or yellow cake mix)
  • 1 pkg. vanilla instant pudding
  • 1/2 Cup light rum
  • 1/2 Cup milk
  • 1/2 Cup vegetable oil
  • 4 eggs
Glaze
  • 1 Cup sugar
  • 1/4 Cup light rum
  • 1/4 Cup water
  • Combine; boil for 2 or 3 minutes.
  • Drizzle over hot cake.

    Grease and flour bundt pan or tube cake pan. Crumble nuts in bottom of pan.

    Place cake and pudding mix in large bowl, add all other ingredients and mix for 2 minutes.

    Pour into cake pan and bake at 350° for 50-60 minutes. Test for doneness with toothpick.

    Remove from oven and immediately pour glaze over cake. Cake will start to settle.

  • 5

    Loosen edges of cake so glaze runs down sides.

  • 6

    Cool 30 minutes and remove from pan to serving plate.
