Zucchini Parmesan
ingredients
- 4 medium zucchini, cut into 1/4" slices
- 1/2 to 1 tsp minced garlic
- 1 Tbsp olive oil
- 14-oz can Italian diced tomatoes, undrained
- 1 tsp seasoned salt
- 1/4 tsp pepper
- 1/4 Cup grated parmesan cheese

In a large skillet, sauté garlic in oil.

Add zucchini, cook and stir for 4-5 minutes, or until crisp-tender.

Stir in tomatoes, salt, and pepper. Simmer uncovered 9-10 minutes. Liquid should be absorbed and the mixture heated through.

Sprinkle with parmesan cheese, and serve.
