Mexican Stuffed Chicken Breast
ingredients
- 2 4-oz boneless skinless chicken breasts
- 2 oz Monterrey Jack cheese
- 1 egg, beaten
- 3 Tbsp bread crumbs
- 4 tsp parmesan cheese
- 1 tsp chili powder
- Salt and pepper

Combine bread crumbs, parmesan cheese, and chili powder.

Cut a pocket in each breast the long way.

Stuff half the Monterrey Jack cheese in each breast.

Dip each breast in beaten egg, and roll in bread crumb mixture.

Bake uncovered 20 minutes at 375°.
