Sole a la Lydie
Recommended for Advanced Beginners, unless you really want to struggle with filleting flounders.
ingredients
- 2 pound Flounder or Sole, Filleted. (Or, you could struggle with doing it yourself for 1/2 hour, which I did)
- 1/2 onion, diced.
- juice of lemon.
- 1/2 cup Pinot or Sauvignon (white wine)
- 3 tbl Butter
- 1/4 cup milk
- 1 cup fresh spinach
- 1/4 cup parmesan
- salt and pepper to taste

Squeeze lemon juice over fish. Add onion, 1/2 spinach, wine, and dot liberally with butter.

Bake 20 minutes at 350 degrees.

Melt parmesan, milk, 1 tbl butter in microwave.

Add 1/2 spinach over top of fish.

Bake five more minutes.

Flounder filleting is possible!
