Recommended for Advanced Beginners, unless you really want to struggle with filleting flounders.

ingredients

  • 2 pound Flounder or Sole, Filleted. (Or, you could struggle with doing it yourself for 1/2 hour, which I did)
  • 1/2 onion, diced.
  • juice of lemon.
  • 1/2 cup Pinot or Sauvignon (white wine)
  • 3 tbl Butter
  • 1/4 cup milk
  • 1 cup fresh spinach
  • 1/4 cup parmesan
  • salt and pepper to taste

directions

  • 1

    Squeeze lemon juice over fish. Add onion, 1/2 spinach, wine, and dot liberally with butter.

    Bake 20 minutes at 350 degrees.

  • 3

    Melt parmesan, milk, 1 tbl butter in microwave.

  • 4

    Add 1/2 spinach over top of fish.

  • 5

    Bake five more minutes.

Flounder filleting is possible!

    Very good. I recommend buying the sole and having the fish market fillet it.
