Lora's Thai Style Chicken and Rice Soup

ingredients
- 6 Cups Chicken Stock
- 2 Cups Water
- 1 T Thai Green Curry Paste
- 4 Garlic Cloves Chopped Coarsely Chopped
- 1 t Coriander Seeds Crushed
- 2 Cups Fresh Cilantro Leaves (do not leave out)
- 1 Stalk Lemongrass chopped into 1/2 inch pieces
- 1 Cup Jasmine Rice
- 1 lb boneless chicken sliced (raw) - you can use breasts or thighs or both or you can use shrimp or both
- 1 can unsweetened coconut milk stirred
- 1/4 lb snow peas
- 2 T Asian Fish Sauce
- 2 T Fresh Lime Juice
- salt to taste

Combine Stock through lemongrass in large stockpot and simmer about 20-30 minutes.

Line a sieve with paper towels or a clean dishtowel and pour through to another stockpot. Discard all solids.

Stir rice into soup and simmer about 15 minutes covered.

Add Chicken into soup and simmer uncovered until just cooked through (about three minutes).

Stir in coconut milk, snow peas and fish sauce and simmer uncovered 2-3 minutes. Remove from heat and stir in lime juice and season to taste.

You may garnish with a slice of lime and fresh chopped cilantro if you like.
