Avocado-Cucumber Soup
ingredients
- 1 English cucumber -- peeled and cut into cubes (about 2 cups)
- 2 avocados -- pitted and peeled
- 1/2 C low-fat plain yogurt
- 3 tbsp fresh lime juice
- 1 small minced jalapeno pepper -- seeds and ribs removed
- 1/3 C sliced scallions
- 2 tbsp chopped fresh coriander
- 1 C ice water
- coarse salt and ground pepper
directions
In a blender, combine all ingredients. Purée until completely smooth. Thin with additional ice water if necessary. Chill about an hour.
notes
This also makes a nice sauce for chicken if you heat it, and is a good salad dressing.
