Avocado-Cucumber Soup

  • 1 English cucumber -- peeled and cut into cubes (about 2 cups)

  • 2 avocados -- pitted and peeled

  • ½ C low-fat plain yogurt

  • 3 tbsp fresh lime juice

  • 1 small minced jalapeno pepper -- seeds and ribs removed

  • ⅓ C sliced scallions

  • 2 tbsp chopped fresh coriander

  • 1 C ice water

  • coarse salt and ground pepper

  • In a blender, combine all ingredients. Purée until completely smooth. Thin with additional ice water if necessary. Chill about an hour.

notes:

This also makes a nice sauce for chicken if you heat it, and is a good salad dressing.
