ingredients

  • 1 1/2 c. sugar
  • 1/2 c. butter
  • 1 egg
  • 1/2 c. milk
  • 3 1/2 c. flour
  • 2 tsp. soda
  • 2 tsp. cream of tarter
  • (Sift together soda and cream of tarter)
Filling:
  • 2 lemons (grade rinds and juice)
  • 1 c. sugar
  • 2 tsp. cornstarch
  • 2 c. chopped raisins
  • 1 c. boiling water
  • 1/2 c. chopped pecans

    Cream together sugar and butter. Add well beaten egg, milk, flour, soda, and cream of tarter. Chill dough; roll out very thin and cut in approximately 2 1/2" circles. Place half cakes in baking tins, and place 1 tsp. filling and another cake piece. Bake 12-15 minutes at 350°.

    For filling: cook together grated rind and juice of lemons, sugar, cornstarch, chopped raisins, pecans, and boilign water until thickened. Cool before using.
