Mission Gazpacho
Although there is a long list of ingredients, this soup comes together very quickly. It’s a great way to use up summer vegetables...and it’s super healthy!
ingredients
- 3 lbs. ripe tomatoes
- 3 medium cucumbers
- 1 medium onion
- 1/4 green pepper (add more if you like)
- 1 clove of garlic
- 2 cups tomato juice
- 3 tbsp. tarragon vinegar
- Salt & pepper (to taste)
- Tabasco Sauce (to taste)
- 1/2 tsp. dried tarragon
- 3 tbsp. parsley
- 1 tbsp. chopped chives
- 3 tbsp. lemon juice
- 1 tsp. paprika
- 1/2 cup olive oil (optional)

Peel & dice tomatoes making sure that you don’t lose any of the juices. Peel & dice cucumbers, onion & green pepper (fine dice). Place in a large container & add remaining ingredients.

Chill & serve with a dollop of sour cream or Greek yogurt.
notes
Can use V-8 or Spicy V-8 in place of the tomato juice.
