Grilling Sauce For Vegetables
ingredients
- 1/4 C olive oil
- 2/3 C dry sherry
- 1 1/2 C celery -- minced
- 3 C onion -- minced
- 1/2 C red bell pepper -- minced
- 6 cloves garlic -- minced
- 2 1/2 tsp cayenne or chile powder
- 1 tbsp gulden’s mustard
- 1 tbsp honey
- 6 ozcan tomato paste
- 1/3 C ketchup
- 1/2 lemon -- sliced, remove seeds
- 1 tbsp white wine vinegar
- Salt and pepper to taste
directions
Put oil and sherry in a large saucepan over medium heat. Add garlic, onion, bell pepper and celery; sauté for 30 or 40 minutes Stirring frequently. Add remaining stuff and gently simmer for about 2 hours. Remove from heat, and when cool, puree or process. Taste and adjust with salt, pepper and a shot of hot sauce if desired.
