Goulash, Hungarian Style
ingredients
- 3 tbsp butter or margarine
- 3 C thinly sliced onions
- 4 med potatoes -- peeled & quartered
- 1 1/2 lbs. chuck -- rump, or round beef, cut into 1" cubes
- 2 1/4 tsp salt
- 4 1/2 tsp paprika
- 1 C water
directions
In a large skillet, over medium high heat, melt the butter and cook the onion until golden, 5-6 minutes. With a slotted spoon remove the onion to the slow cooker. Place the potatoes on the onion. Add meat to the skillet and sauté until well browned on all sides. Sprinkle the meat with salt and pepper and lift into the slow cooker. Add the water to the skillet; scrape up the pan juices; turn into the cooker. Cover and cook on low for 8-10 hours or until tender.
