ingredients

  • 2 tbsp vegetable oil
  • 3/4 lbs. chicken breasts -- boneless, skinless in 1" cubes
  • 1 C onion -- chopped
  • 1 green bell pepper -- chopped
  • 2 cloves garlic -- minced
  • 28 oz canned -- stewed tomato
  • 30 ozcan black beans -- rinsed & drained
  • 3/4 C salsa
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp chicken bouillon granules

directions

Heat the oil in a dutch oven. Sauté the chicken with the onion, green bell pepper and garlic until the chicken loses color. Add the remaining ingredients. Simmer for 20 minutes. Serve.
