Cajun Chicken with Caramelized Banana Rice
ingredients
- 4 chicken breast halves -- boneless and skinless
- 2 tbsp paprika
- 1/2 tbsp garlic salt
- 1 1/2 tsp oregano
- 1 1/2 tsp thyme
- 1/2 tsp pepper
- 1/2 tsp cumin
- 1/4 tsp cardamom
- 1/4 tsp cayenne pepper
- 2 bananas
- 2 tbsp butter
- 2 tbsp sugar
- 1 C basmati rice -- cooked according to package directions
- 2 tbsp sweetened coconut milk
- 3 tbsp chopped fresh mint
- mint leaves
directions
In 13x9-inch lightly greased baking dish, place chicken breasts. In small bowl, mix together paprika, garlic salt, oregano, thyme, pepper, cumin, cardamom and cayenne pepper; rub evenly over chicken. Place chicken in 350 degree F. oven and bake about 30 minutes or until tender. In sauté pan over medium heat, place butter and sugar. Stir until sugar dissolves and begins to caramelize. Cut bananas in half lengthwise and add to pan, tossing to coat. Cut bananas into small pieces and mix with cooked rice. Stir in coconut milk and chopped mint. Place rice on serving dish and arrange chicken on top. Garnish with mint leaves.
