Artichoke Pesto
ingredients
- 1/4 C pine nuts -- toasted
- 1/2 C parmesan -- grated
- 1 - 2 tbsp olive oil
- 5 artichoke hearts and bottoms -- cooked
- 3 cloves garlic or to taste
- 1 - 2 tsp lemon juice
directions
Add all ingredients to a food processor or mortar. Process. Add water to adjust consistency. Makes about 1 cup.
