  • 3 cups flour
  • 1/2 cup sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 eggs, lightly beaten
  • 1 cup vanilla yogurt
  • 1/4 cup butter, or equivalent, melted
  • 1 1/2 tsp. vanilla extract
  • 1 1/2 cups fresh or frozen raspberries

    In a bowl, combine first five ingredients.

    Combine next four ingredients in another bowl. Stir in dry ingredients just until moistened. Fold in berries.

    Fill greased muffin cups or paper lined muffin pan 3/4 full. Bake at 400 degrees for 18-20 minutes. Serve immediately
