Pork with Curried Apple and Couscous
ingredients
- 1 1/2 pound pork tenderloin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 6 teaspoons butter divided
- 1 large green onion thinly sliced
- 2 garlic cloves, minced
- 2 small apples, peeled and sliced
- 2 tablespoons raisins
- 2 teaspoons cornstarch
- 2 teaspoons curry powder
- 2/3 cup chicken broth
- 3 cups hot cooked couscous

Sprinkle pork with salt and pepper. In a large skillet, brown pork in 2 teaspoons of butter. Reduce the heat to low; cover and cook for 15-20 minutes until meat is done turning occasionally. Remove the pork and keep it warm.

In the same skillet,saute onion and garlic in remaining butter until tender. Add apple and raisins; saute 2 minutes longer. Combine the cornstarch, curry powder and broth until smooth; stir into apple mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened.Serve this with the couscous.
