Veggie Burgers - The Good Kind
As a mostly-veg who doesn’t like many vegetables, I have problems with most veggie burgers. Not these though! They aren’t made of broccoli and squash, they don’t try to taste like meat, and they have real protein in them! Hurrah!
ingredients
- 2 cans lentils (or chickpeas or pinto beans or...), drained and purreed
- 1 cup chopped toasted walnuts (or pine nuts or...)
- 2 eggs, beaten
- 1 tsp oregano
- 2 tsp cumin
- 2 tsp mustard
- 5-12 cloves garlic, minced
- 1 1/2 cup diced onion
- 1 1/2 cup wheat germ
- 3/4 cup milk
- 2 Tbs olive oil
- Salt and pepper

Combine all ingredients in large mixing bowl, seasoning to taste. Form the mixture into twelve burger patties with your hands.

Fry in a hot skillet with a few more Tbs of olive oil for 3 to 4 minutes a side. Garnish with bun or whatever and serve OR...

Freeze flat, separated by wax paper.
