Chicken Orzo Salad
Light summer dinner
ingredients
- 1/4 cup olive oil
- 3 tablespoons white wine vinn.
- 4 cloves garlic
- pinch of red pepper
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3-6 boneless skinless chicken breasts
- 1 pound orzo
- 1 pint cherry tomatoes
- 1 cucumber
- 2 tablespoons basil
directions

Combine olive oil, vinegar, garlic, red pepper, salt and pepper for marinade. Marinade chicken for 1 hour or more.

Grill chicken

Boil Orzo for 8 minutes, drain, cool, add a bit of salt and pepper, splash of olive oil and vinegar.

Dice cucumber, half tomatos, and add to orzo. Garnish with shredded basil and serve with an Italian dressing on the side.
