Greek Eggplant
ingredients
- 12 eggplants stemmed,halved
- 1 T salt
- 1/3 cup chopped oil-packed sun dried tomatoes
- 1/4 c lemon juice
- 2 T olive oil
- 2 minced garlic cloves
- 1 T parsley chopped
- 1 T mint chopped
- 1 c crumbled feta

Place eggplant halves in large colander with salt- stand 1/2 hour then dry on paper towels. Stir all other ingredients then add feta, salt & pepper. Chill.

Brush eggplant with olive oil and grill until tender (3 min. per side). Place on platter and garnish with topping once cut.
