Quick fried rice
ingredients
- 1 tbsp sesame oil
- 2 cups broccoli florets
- 4 chopped shallots
- 1/2 medium, chopped red capsicum
- 1 tbsp chopped lemon grass
- 2 tsp red curry paste
- 1/2 cup bean sprouts
- 125 g fresh or canned baby corn
- 200 g cubed packet Thai spicy tofu
- 3 cups cold, cooked rice
- 2 tbsp soy sauce

Heat half the oil in a wok or large frying pan. Add broccoli, shallots, capsicum and lemon grass and saute for 5 minutes.

Add the curry paste, bean sprouts and corn, stir-fry for a further 2 minutes. Remove vegetables from the pan.

Heat the remaining oil in the frypan. Add tofu and cook for 3 minutes or until golden. Add rice and stir-fry until heated through. Add the vegetables and soy sauce and stir until the rice mixture is evenly coated.
