Apple & Saltana Muffins

- 80g butter
- 2/3 cup apple juice
- 1 egg, lightly beaten
- 2 cups plain flour
- 1 tbs baking powder
- 1/2 tsp cinnamon
- 1/4 cup brown sugar
- 1/2 cup saltanas
- 1 fuji apple

Preheat the oven to 180°. Line a 12 medium muffin pan with paper cases.

Melt butter and cool slightly. Whisk with apple juice and egg and set aside.

Sift flour, baking powder and cinnamon together into a large bowl. Mix in brown sugar and sultanas. Peel apple and coarsely grate into a bowl. Toss to combine.

Add liquid ingredients all at once and mix quickly and lightly together, until just combined.

Divide evenly betwwen cases and bake for 20 - 25 mins, until golden brown.
