Pierogi Casserole
Pierogis are mashed potatoes with cheese covered with pasta and boiled, sort of like a ravioli. Darlene’s mother-in-law always made these when we visited Ohio. This recipe tastes like the real thing without all the work.
ingredients
- 9 lasagna noodles
- 1 1/2 sticks butter
- 4 medium onions, finely chopped
- 9 large potatoes, cooked and mashed
- 1 cup Velveeta cheese, diced
- 1 cup sour cream

Cook potatoes and mash.

Cook noodles according to package instructions.

Sauté butter and onions in frying pan.

To the hot mashed potatoes, stir in sour cream and Velveeta cheese.

Layer 1/3 of noodles in 9 x 13 pan, then spread 1/3 of potato mixture over the noodles.

Add 1/3 of onion mixture over the potatoes.

Repeat with noodles, etc. until you have three layers.

Bake, covered in 375° oven for 30–45 minutes.

Can be frozen after cooked.
