Beef and Cheese Enchiladas
Served with tortilla chips and salad
ingredients
- 1/2 lb lean ground beef
- 1/2 cup onion, chopped
- 1/2 cup sour cream
- 1/2 cup white corn, drained
- 1 1/2 cup shredded cheddar
- 4 flour tortillas
- 1 can enchilada sauce
directions

1. Cook and drain beef with onions

2. Stir in sour cream and corn

3. Sprinkle 1/2 cup of cheese in bottom of square baking dish

4. divide beef mixture onto each tortilla, top with a few drops of enchilada sauce

5. Roll and place seam side down in baking dish

6. Pour remaining sauce over enchiladas

7. Bake uncovered at 350°

8. Sprinkle with remaining cheese and return to melt
