Chili
The best chili I’ve ever had anywhere! Serve with individual bowls of sour cream, fresh chopped tomatoes, lettuce, and onions. Eric loves Fritos Scoops or rice and of course, Frank’s Hot Sauce, too!
ingredients
- 4 stalks celery, with leaves, chopped
- 3 green onions, chopped
- 2 cloves garlic, minced
- 1 large onion, chopped
- 1 green pepper, chopped
- 1 Tbsp. olive oil
- 2-3 lbs. ground beef or turkey
- 1 (15 oz.) can tomato sauce
- 1 (6 oz.) can tomato paste
- 2 C. water
- 1 (1 1/2 oz.) can chili powder (I add more!)
- 1 Tsp. salt
- Few dashes pepper
- 1 (16 oz.) can red kidney beans undrained

directions
Sauté first 5 ingredients in oil in a large Dutch oven until tender. Add ground meat and brown, stirring to crumble. Drain well. Add tomato sauce and next 5 ingredients to meat mixture; stir well. Bring to boil; reduce heat and simmer, uncovered, 30 minutes or to desired consistency. Add beans the last 15 minutes.
