Chicken and Spaghetti

ingredients

  • 8 chicken pieces
  • 2 Tbsp. oil
  • 2 large onions, chopped
  • 2 (15 oz.) tins stewed tomatoes with onions and peppers, chopped
  • 1 (14 oz.) bottle ketchup
  • 1 (46 oz.) tomato juice
  • Salt, pepper, Italian seasonings
  • 16 oz. spaghetti
  • Parmesan cheese

directions

Season chicken with salt and pepper. Brown chicken in hot oil in large, heavy pot. Remove chicken and sauté onions in same pot. Add tomatoes and let simmer for 15 to 20 minutes. Add ketchup and tomato juice. Bring to boil and return chicken to pot. Add more salt and pepper if desired and Italian seasonings. Cover and simmer about 1 hour. Serve over cooked spaghetti and top with Parmesan cheese.
