Fried Baby Back Ribs

I saw this recipe from Gourmet Mag.

ingredients

FOR RIBS
  • 6 cups vegetable oil
  • 2 baby back ribs, cut in pieces
  • 1/3 cup all-purpose flour
  • 3 large eggs
  • 1 3/4 cups panko
  • Salt and pepper
  • Little bit of soy and fish sauce
FOR DIPS
  • 1/2 cup sour cream
  • 2 tablespoons mayonnaise
  • 1 Kirby cucumber, coarsely grated
  • 2 tablespoons Dijon mustard

    * Salt and pepper the ribs, and splash a little bit of soy and fish sauce, and let it sit for 2 hrs.

    * Heat up the oil and stick a wooden chopstick in it. If it starts bubbling up, the oil is hot and ready.

    * Drench the ribs into four--egg--then panko to evenly coat them. Fry the ribs in the oil in batches. Don’t crowd them. Fish them out when they are nice and golden brown, and keep then warm in the oven (about 200 degree).

    * Stir together sauce ingredients. Serve ribs with sauce.
