Crustless Spinach Quiche
Served with Italian garlic bread and salad
ingredients
- 8 oz shredded mozzerella
- 1/2 cup whipping cream
- 1/3 cup prepared pesto
- 10 oz frozen chopped spinach, thawed/squeezed
- 5 eggs, beaten

1. Reserve 1/2 cup of cheese

2. Combine remaining cheese and all ingredients and pour into greased pie plate.

3. Bake for 30 minutes at 375°

4. Spread remaining 1/2 cup cheese on top and return to melt

5. Cut into wedges
