Chipotle Tamale Pie
ingredients
- 1 T. unsalted butter
- 1 T. olive oil
- 1 lb. lean ground beef or turkey
- 1 medium onion, chopped
- 1 bell pepper, diced
- 2 garlic cloves, minced
- 2 t. cumin
- 1 (15 ounce) can pinto or black beans
- 1 (8 ounce) can diced tomatoes
- 2 chipotle chili’s + 1 T. adobo sauce
- 1 C. grated cheddar
- 1/2 c. cilantro
- 1 box Jiffy cornbread mix
- 1 egg
- 1/3 c. milk

Heat olive oil in a large skillet over medium heat. Preheat oven to 400 degrees. Grease an 8 inch baking dish with butter.

To the skillet, add ground meat, onions, bell pepper & garlic. Cook until meat is no longer pink. Add cumin & season with salt & pepper. Add beans, tomatoes, chili’s & bring to a boil. Reduce heat & simmer about 5 minutes. Remove from heat, stir in cheese & cilantro.

Spread mixture into baking dish. Combine cornbread mix with milk & egg. Spread batter over meat mixture. Bake in the oven for 20-25 minutes or until cornbread is golden brown.

Slice & serve. Optional: serve with sour cream & salsa.
