Pasta Salad
A great meal alone or compliment to soup and bread. Works great to take to the island.
ingredients
- 1 lb pasta (bow ties, shells or rotelle)
- olive oil
- 1 small jar pimiento
- 1 medium red pepper, diced
- 1 medium green pepper, diced
- 1 cup frozen peas
- 1 cup frozen corn
- 1 can black beans (drained)
- 2 stalks celery
- 1 red onion, diced medium sized (optional)
- Fresh basil cut up for added flavor
- Optional to add any cut-up cooked meat you have: chicken, steak or shrimp.
- Favorite salad dressing

1. Cook pasta, drain and sprinkle with olive oil.

2. Add all ingredients and add salad dressing.

3. Refridgerate until ready to use.

4. At serving time, have extra dressing as the pasta might absorb while refrigerated.
