A great meal alone or compliment to soup and bread. Works great to take to the island.

ingredients

  • 1 lb pasta (bow ties, shells or rotelle)
  • olive oil
  • 1 small jar pimiento
  • 1 medium red pepper, diced
  • 1 medium green pepper, diced
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 can black beans (drained)
  • 2 stalks celery
  • 1 red onion, diced medium sized (optional)
  • Fresh basil cut up for added flavor
  • Optional to add any cut-up cooked meat you have: chicken, steak or shrimp.
  • Favorite salad dressing

    1. Cook pasta, drain and sprinkle with olive oil.

    2. Add all ingredients and add salad dressing.

    3. Refridgerate until ready to use.

  • 4

    4. At serving time, have extra dressing as the pasta might absorb while refrigerated.
