BBQ Baby Back Ribs with Home Made BBQ sauce
ingredients
- 2 whole slabs pork baby back ribs
- dry rub
- 8 T light brown sugar
- 3 T salt
- 1 T chili powder
- 1/2 tsp fresh ground pepper
- 1/2 tsp cayenne pepper
- 1/2 tsp onion powder
- 1/2 tsp rubbed thyme
- Braising liquid
- 2 bottles dark beer
- 1T honey
- 2 cloves garlic smashed
- 1 C barbecue sauce
- BBQ sauce
- 2 slices bacon
- 2 large sprigs thyme
- extra virgin olive oil
- 1/2 onion
- 2 cloves garlic
- 2 C ketchup
- 1/4 C brown sugar
- 1/4 C molasses
- 2 T red wine vinegar
- 1 tsp. liquid smoke
- 1 T dry mustard
- 1 t ground cumin
- 1 t paprika
- salt and pepper

Preheat oven to 250°. In a bowl, combine dry ingredients and mix well. Place each slab of ribs on heavy-duty foil - shiny side down. Sprinkle each side generously with rub mixture. pat the dry rub into the meat. Seal up the foil completely containing the ribs and refrigerate for at least one hour or even better, overnight.

Combine the beer, crushed garlic clove and honey until well blended. Place the ribs on a baking sheet and open one end of the foil. pour 1/2 the beer mixture in each foil packet and then reseal foil. Braise the ribs for 2 1/2 hours. Increase the oven heat to 450° F. brush with BBQ sauce (either your favorite store bought sauce or the home made sauce in this book)

Wrap the bacon around the thyme sprigs. Heat 2 Tablespoons olive oil and cook bacon until rendered. Add onion and garlic cooking slowly about 5 minutes. Add remaining ingredients. Cook on low for 1 hour until all flavors have melded and the sauce thickens
