ingredients

  • 1 lb. extra lean ground beef -- (93% lean)
  • 1/2 C chopped onion
  • 1 can mexicorn
  • 16 oz tomatoes -- canned do not drain (I Like to use Mexican Style Diced tomatoes if I have them)
  • 1/2 C brown rice -- uncooked
  • 3 tsp chili powder -- or more
  • 1 1/2 tsp salt
  • 1/8 tsp pepper

directions

Heat oven to 350F. In large skillet, cook and stir onions and ground beef until lightly browned, drain. Adddrained mexicornr; Stir in tomatoes with liquid, rice, chili powder, salt and pepper; heat to boiling.

Pour into 2-quart casserole. Cover; bake 1 hour.

Can stir in a little processed American cheese or velveeta if desired.
