Rice with artichokes (Arroz blanco con alcachofas)

A wonderful rice dish for a buffet or to accompany any main course. But please make your own chicken stock.

ingredients

  • 2 cups uncooked white rice
  • 1/4 cup olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic minced
  • 5 cups home-made chicken broth
  • 1 cup frozen or fresh peas
  • 1 can of artichokes-drained and cut up in quarters
  • salt & pepper
  • 1/4 tsp of saffron dissolved in water
  • (I dissolved it in a bit of my hot chicken stock)

    Fry the rice in olive oil until it is slightly colored; add chopped up onions and garlic and cook a few min longer.

    Transfer to a 2 quart casserole...I used a heavy pottery one with a matching lid. Add boiling chicken broth, peas, artichokes, salt, pepper, and saffron. Cover and place in oven 350 degrees or 325 convection oven for 40 minutes. serves 6

notes

prefer to use my own chicken stock for this recipe...but if in a pinch you can use canned chicken broth
