if you don’t want spicy food, use tomatoes without jalepenos and sweet sausage serve over whole wheat pasta to make healthier

ingredients

  • 2 tbsp. olive oil
  • 3/4 lb. boneless chicken breasts, cut into 1 inch pieces
  • 1/2 pound spicy (or sweet) italian sausage, sliced
  • 1/2 pound asparagus, cut into 1 inch pieces
  • 1 medium onion, cut into 1 inch pieces
  • 1 medium bell pepper, cored and seeded, cut into 1 inch pieces
  • 1 small zucchini or summer squash, cut into 1 inch pieces
  • 2 cans diced tomatoes with or without jalepenos
  • 2 cloves garlic peeled and chopped fine
  • 1 tsp. dried oregano
  • 1/2 tsp. paprika
  • 1/2 tsp/ black pepper
  • 1/2 lb. linguine, cooked
  • grated parmesan if desired

directions

    heat olive oil in a large skillet

  • 2

    add the chicken and the sausage; cook for about 5 minutes turning once

  • 3

    add asparagus, onion, bell pepper, zucchini, diced tomatoes, garlic, oregano, paprika and black pepper

    stir well

  • 5

    bring to a boil

  • 6

    reduce heat to medium and simmer for about 30 minutes or until all the vegetables are tender

  • 7

    stir occasionally

  • 8

    toss with cooked linguine

  • 9

    serve with cheese if desired
