Banana Chocolate Chip Bread
In this recipe, three flavors (banana, cinnamon, and chocolate) are combined into one sweet treat.
ingredients
- 1 1/2 c unbleached or all-purpose flour,
- 1 1/2 t baking powder,
- 1/2 t baking soda,
- 1/2 t salt,
- 1/2 t ground cinnamon,
- 1/2 c sugar,
- 2 - egg whites or 1/4 cup liquid egg substitute,
- 1/2 c fat-free vanilla yogurt,
- 2 T butter , melted
- 3 lg ripe bananas ,
- 1/2 c mini semisweet chocolate morsels

1. Preheat the oven to 350 degrees F

2. Coat an 8 inch x 4 inch loaf pan with nonstick spray.

3. In a medium bowl, combine flour, baking powder, baking soda, salt, and cinnamon.

4. In a large bowl, with an electric mixer, beat sugar and egg whites/egg substitute until light and fluffy. Blend in yogurt and butter.

5. Mash bananas with a fork and stir into yogurt mixture. Stir in flour mixture. Fold in chocolate chips. Pour into the prepared pan.

6. Bake 50 to 55 minutes, or until a wooden pick inserted in center comes out clean. Remove from the oven.

7. Cool 10 minutes in the pan on a rack. Remove from the pan and cool completely.
