  • 6 large peaches cut into thin wedges
  • 1/4 cup sugar
  • 1 tab. fresh lemon juice
  • 3 tablespoons tapioca
  • for biscuit topping
  • 1 cup flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 stick unsalted butter cut into small piees
  • 1/4 cup boiling water

    pre heat oven to 425 degrees

    Toss peaches with sugar lemon joice and tapioca in a 2 qt baking dish and bake for 10 minutes

    make topping by stir together flour, sugar, baking powder and salt. Blend i butter with your fingertips or a pastry blender until mixture resembles coarse meal. Sitr in water until just combind.

    remove peaches from oven and drop spoonfuls of topping over them. ake until topping is golden 25 minutes..
