Chicken Cacciatore
ingredients
- 1 whole chicken cut up
- 1/4 cup extra virgin olive oil
- 1/4 cup apple cider or wine vinegar
- 3-4 medium potatoes
- garlic, salt and pepper to taste

Using a “dutch oven” type of pan, heat the pan and cover the bottom with olive oil. While the oil is heating coat each piece of chicken with garlic powder. Brown the chicken until golden brown, keep turning it. You can use just chicken breasts or thighs if you prefer rather than a whole chicken. While the chicken is browning peel and slice the potatoes. Once the chicken seem to be nicely browned place the sliced potatoes on the top of the chicken. Pour the vinegar over the top and then salt and pepper to taste. You can also add a little more garlic powder over the potatoes. Cover and simmer about 45 minutes. It is absolutely delicious. If you like peas throw in some frozen or canned peas during the last few minutes. Complete delicious meal in one pan. Gramma never liked to use anything more than necessary. Enjoy!!
