Cinnamon Buns
ingredients
- 2/3 C soymilk
- 4 Tbsp apple juice
- 1 1/2 tsp active dry yeast
- 1 Tbsp canola oil
- 1/4 tsp salt
- 2 C pastry flour
- 1/2 C additional pastry flour for kneading
- Cinnamon filling
- 5 Tbsp apple butter
- 1 tsp cinnamon

Place milk in saucepan and scald. Remove the pan from heat, pour milk into bowl. Stir in juice.

Put yeast, oil and salt into the lukewarm mixture.

Gradually beat in the 2 cups of lour with a wooden spoon, adding only half a cup at a time.

Knead the dough on a floured surface for five minutes, until smooth and elastic.

Transfer the dough to a clean, large lightly oiled bowl, turning it once to coat the top. Cover the bowl with a clean, damp cloth and let the dough rise in a warm place for 30-60 minutes.

Mist a baking sheet with a nonstick cooking spray and set it aside.

While the dough is rising, prepare the filling. Mix the apple butter and cinnamon together.

Punch the raised dough in about eight places. Knead it again on the floured surface.

Roll the dough out into an 8x15 inch rectangle.

Spread filling over dough.

Roll dough into log.

Slice log into about one inch pieces, arrange on oiled baking sheet.

Bake at 350 for 20-22 minutes.

Add melted butter to top of buns of they come out a bit too dry.
