Chicken Shawarma

This is an amazing recipe from the Cooking Light Magazine (July 2008) that I slightly altered.

  • To prepare chicken, combine first 6 ingredients in a medium bowl. Add chicken to bowl; toss well to coat. Let stand at room temperature for 20 minutes.

  • Preheat a large pan and coat with cooking spray. Add chicken to pan and cook, stirring occasionally, until cooked through.

  • Warm pitas in oven, on grill, or in microwave. Top each pita with 2 Tbsp tzatziki sauce, ¼ of chicken mixture, tomatoes, cucumber, and lettuce.
