Chicken Shawarma
This is an amazing recipe from the Cooking Light Magazine (July 2008) that I slightly altered.
ingredients
- 2 Tbsp fresh lemon juice
- 1 tsp curry powder
- 2 tsp extravirgin olive oil
- 3/4 tsp salt
- 1/2 tsp ground cumin
- 3 garlic cloves, minced
- 1 lb skinless, boneless chicken breast, sliced thinly
- 1/2 cup premade tzatziki sauce
- cooking spray
- 4 (6-inch) pitas
- tomato slices
- cucumber slices
- shredded lettuce (optional)

To prepare chicken, combine first 6 ingredients in a medium bowl. Add chicken to bowl; toss well to coat. Let stand at room temperature for 20 minutes.

Preheat a large pan and coat with cooking spray. Add chicken to pan and cook, stirring occasionally, until cooked through.

Warm pitas in oven, on grill, or in microwave. Top each pita with 2 Tbsp tzatziki sauce, 1/4 of chicken mixture, tomatoes, cucumber, and lettuce.
