Beef Queso Dip
This delicious dip can be used as an appetizer at a party or we even eat it as a meal sometimes! Be careful, though, it is VERY addictive!
ingredients
- 1 1/2 lbs ground beef
- 1 can cream of mushroom soup
- 1 can mild Rotel
- 1 lb Velveeta with 2% milk

Cut up the Velveeta into cubes and place in a large microwave-safe dish. Add the soup and Rotel over the top (no need to mix). Put the bowl in the microwave and cook on HIGH for 5 minutes.

In the meantime, cook the ground beef in a pan until it is browned. Drain and set it to the side.

Once the cheese mixture has finished it’s first round of cooking, carefully take it out of the microwave and stir it well. Place it back in the microwave and cook on HIGH for another 5 minutes.

When the cheese mixture is done with it’s second round of cooking, carefully remove it from the microwave and stir it well again. Add the ground beef and mix it all together.

If any cheese lumps remain at this point, you can put it in the microwave for another few minutes to melt them completely.

Serve this dip with “heavy-duty” chips - it is a thick and hearty dip!

You can make this in the crockpot, too if you wanted. Just let it cook for about 2-3 hours to melt everything together.
