Asparagus Frittata

Low-Carb, Low calorie breakfast one pan meal.

ingredients

  • 2 teaspoon olive oil
  • 1 small onion, thinly sliced
  • 1/2 teaspoon sea salt
  • 1/4 cup sundried tomatoes in olive oil (julienne slices)
  • 1 pound asparagus, sliced diagonally, into 1inch lengths
  • 4 large eggs or 1 1/2 cup of egg whites
  • lightly beaten
  • 1 cup of bacon bits (real bacon, oscar mayer), (omit if vegetarian)
  • 1/4 cup monterey jack
  • 1/4 cup cheddar cheese
  • 1/4 cup parmeasan cheese (for low calorie only use parmeasan cheese 1/2 cup).

directions

Use a 10 inch cast iron skillet, Heat olive oil over medium heat. Add onions and salt,stir continually, until translucent, about 3 minutes. Add sundried tomatoes, asparagus, reduce heat to medium-low, cook covered until asparagus are barely tender, 6 to 8 minutes. Pour lightly beaten eggs over vegatables until almost set,still runny on top, about 2 minutes. While cookinh, pre-heat the oven broiler. Sprinkle bacon bits and layer cheese one at a time with parmeansan the last layer. Put in oven to broil until cheese is melted and browned, about 3 to 4 minutes. Remove from oven, let rest for 5 minutes. Then remove from pan and slices with a pizza wheel.
