Egg Casserole Deluxe
A quick and easy recipe that will be perfect for guests and family brunches. Can easily be halved, quartered or doubled if you have a crowd.
ingredients
- 12 eggs
- 1 qt. milk
- 4 cups seasoned croutons
- 2 cups shredded cheddar cheese
- diced onion to taste
- 1 T. dry mustard
- 1 large can sliced mushrooms (optional)
- 1 lb. sausage browned and drained OR 1 lb bacon, browned and diced
- SAUCE
- 1 can cream of mushroom soup
- 1 can cheddar cheese soup
- 1/2 cup milk
directions
Slightly whip eggs and add milk, croutons, cheese, mustard, onions and mushrooms. Put in a greased 13 X 9 casserole and allow to sit in refrigerator at least 24 hours. 2 days would be better. Top with meat and bake at 375* for 55 minutes. Allow to rest. If covered with foil and towels, it will stay hot for a few hours. SAUCE: Mix the soups with the milk and bring to a simmer. Serve on top of the casserole. Serves at least 12.
