Mediterranean Salad
ingredients
- 2 Armenian cucumbers (I use any kind)
- 4 tomatoes, sliced
- 4 oz sliced feta or freah mozzerella
- 7 oz Kalamata olives
- 1/4 c chopped fresh basil or mint
- 2 T olive oil
- 2 t. lemon juice or balsamic vinegar
- sea salt and pepper to taste
directions
Arrange cucumbers, tomatoes, feta, and olives on individual salad plates. Add basil and drizzle with olive oil an dlemon juice. Add sea salt and pepper to taste. Chill 1/ hour before serving.
