Rum Cake
Serve this to your special man for his birthday - that’s what all the Ankarlo women do!
ingredients
Cake- 1 cup chopped nuts (pecans or walnuts)
- 1 package yellow cake mix
- 1 large package instant vanilla pudding
- 4 eggs
- 1/2 cup light rum
- 1/2 cup water
- 1/2 cup oil
- 1 tablespoon butter, melted
- 1/4 cup water
- 1 cup sugar
- 1/2 cup light rum

Cake

Grease and flour a bundt pan. Put 1 cup chopped nuts in bottom of pan.

Use electric mixer and beat, cake mix, pudding mix, eggs, rum, water, and oil. Pour into pan and bake at 325° for 1 hour.

Cool cake for about 20 minutes. Then poke holes in cake with wooden skewer, clear to bottom of pan.
Glaze

Mix butter, water, and sugar the glaze ingredients. Bring to a boil and boil for 5 minutes, stirring constantly.

Remove from heat and add 1/2 cup rum. Stir and pour over cake in pan. Let set for 20 minutes and turn out.
