Chicken Pasta Salad
ingredients
- 8 oz. whole wheat pasta
- 2 c. white meat chicken, cut into bite size pieces
- 1 sweet pepper - diced
- 2 celery ribs, trimmed and chopped
- 1/2 c. crumbled feta cheese
- 1/2 c. cucumber
- Dressing:
- 2 Tbsp white vinegar
- 2 Tbsp light mayo
- 1 Tbsp honey
- 1/4 tsp salt
- 1/2 tsp black pepper
- 1/4 c. extra-virgin olive oil
- 1/4 c fresh dill - chopped
directions
Cook pasta according to directions on box. Drain and rinse with cool water. Let it cool until room temperature. In large bowl combine: cooled pasta, chicken, pepper, celery and crumbled feta. Drizzle with dressing and toss to coat. Serve immediately or refrigerate for later.
