Birthday Ribs and Cherry Sauce
It’s about the cherries and mom’s surprise birthday cooking class. A favorite of Snugs, mom, AJ and Sang.
ingredients
- “Ribs”
- 2 full racks of pork ribs (4-5 pounds)
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 crushed red pepper
- 2 bottles wheat beer
- “Cherry Orange BBQ Sauce”
- 1 cup chicken stock
- 1/3 cup “whole fruit” cherry preserves
- 1/3 cup orange juice
- 1/4 cup fresh lemon juice
- 1/2 teaspoon grated lemon peel
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cloves
- 1/2 cup Port wine
- 2 teaspoons cornstarch
- 1/4 cup orange marmalade
- 1 tablespoon ketchup
- 3/4 teaspoon crushed red pepper

Combine seasonings (add more/less to taste) and rub onto all surfaces of meat.

Place ribs on on a shallow sheet pan and let stand for 15 minutes.

Pour beer into bottom of pan, cover tightly with foil and bake ribs at 275° for 1 1/2-2 hours or until tender. Cool to room temperature.

Cut ribs into individual pieces of 1-2 bones each and grill over medium-low flame until hot.

Brush with cherry orange BBQ sauce toward the end of the grilling time and serve extra sauce on the side.

“Cherry Orange BBQ Sauce”

Combine chicken broth, cherry preserves, orange juice, lemon juice, lemon peel, cinnamon and cloves in a heavy medium saucepan.

Boil over medium heat until broth mixture is reduced by half, about 6-8 minutes.

Whisk Port and cornstarch in a small bowl to blend. Whisk Port and cornstarch mixture, orange marmalade and ketchup into reduced broth mixture.

Bring to simmer over medium heat, whisking constantly. Simmer until flavors blend and sauce thickens slightly, whisking frequently, about 5 minutes.

Season sauce to taste with salt, pepper and crushed red pepper.
